Traditional Pumpkin Soup with The Gourmet Specialists
There’s nothing quite like a delicious, traditional, home made pumpkin soup! It is so easy to make and so warming on cold days. See the simple recipe below - it will soon become a family staple!
Ingredients:
Olive oil
1 garlic clove, chopped
1 brown onion, chopped
700g pumpkin, chopped and peeled (roast with some olive oil, salt & pepper if you have time)
1 leek, chopped (white section only)
1 sweet potato, chopped
1/2 tsp ground nutmeg
1L vegetable stock
125ml thickened cream

Method:
Add some oil to a large saucepan, and cook the onion. Add the garlic and cook for a couple of minutes until fragrant. Add leek, pumpkin (if not roasted), sweet potato, nutmeg and stir. Add stock along with 1 cup of water and cook until vegetables are soft.
Blend in a mixer in batches until smooth (here’s where you add the pumpkin if you roasted it). Return to saucepan, add cream and stir. Season to your liking.
Serve in bowls, with a drizzle of The Gourmet Specialists Classic on top, and some herbs to garnish if desired.
